This has got the be hands down the EASIEST vegan microwave mug cake recipe you’ll ever see.
I’ve teamed up with Panasonic to celebrate the launch of their new combination microwave (aka an all-in-one) by giving you my favourite super quick microwave mug cake recipe! Never did I think I’d be alive in a time where your microwave could grill, steam and oven bake your food as well as microwave it. The best thing about this recipe is that it is so adaptable, I’ve made a chocolate chip one here (but added the details for an oreo one!) These mug cakes are great for those evenings when you fancy a treat, but don’t want to have to go to the effort of baking an entire cake. I pop all the ingredients in a mug, mix it up and voila… dessert is ready!
Equipment (obviously… a Microwave)
A fork (for mixing!)
Per mug you’ll need:
3 tbsp’s of plain flour (all purpose)
3 tbsp’s of caster sugar
3 tbsp’s of soya milk
2 tbsp’s of coconut oil
1/4 tsp of baking powder
1/4 tsp of vanilla
1 bag of free-from chocolate buttons (or two oreos!)
1 scoop of dairy-free ice cream for the top.
This is my favourite part because all you have to do is mix everything together in your mug, sprinkle your crumble oreos or chocolate buttons on top and pop it in the microwave for 1 minute 45 seconds. I figured this out by starting off with 1 minute, then gradually stopping it every 15 seconds. As you would any cake, you’ll know it’s ready when a toothpick comes out nice and clean!
Let it cool for about 3 minutes, then add a big scoop of ice cream on top and enjoy your beautiful warm chocolate brownie dessert on the sofa with your favourite tv show… (that’s how i’ll be enjoying mine anyway).
